INGREDIENTS SERVES 4

  •  
  • 50g / 2 oz butter
  • 150ml / 5 floz  Maple Syrup
  • 8 eating apples, peeled, cored and sliced
  • 75g / 3oz plain flour
  • 1 egg, beaten
  • 150ml / 5floz milk
  • 1 tbsp oil
  • 4 tbsp Calvados
  • Crème fraiche to serve

METHOD

Place butter, Maple Syrup and apples in a large frying pan. Reduce rapidly for 20 minutes, until syrupy.

Beat flour, eggs and milk until smooth. Heat a little oil in 20cm / 8in non-stick frying pan until smoking.

Pour just enough batter in to base of pan to coat when tilted. Cook until golden, turn and cook briefly on the other side. Repeat with remaining oil and batter to make 4 pancakes. Layer pancakes on a plate and keep warm.

Spoon apples with slotted spoon into pancakes and fold into quarters. Heat pan juices with calvados. Ignite and spoon over pancakes.
